The main risk is cooking. The dishes are cooked, then placed in an oven and kept at temperature … This is the most delicate part. When things are not going well, generally we already know: the team has lunch at 10:30 am and eats the same thing. But what are you going to do? Everything is cooked and ready to be served…


We work all morning to serve 500 people in 2 hours and everything happens there, during the service. This is also the moment that I prefer.”
